Papaya Seed Dressing

Subscribing to the theory that epicurean cooking should, ideally, be easy and inexpensive, I submit this recipe, which I obtained during the summer I taught school on Guam. It's for a dressing of mine that is excellent on fruit salads and even makes an outstanding dressing for coleslaw as part of a summer picnic. Can be prepared in 45 minutes or less.

Tomato Salad with Feta and Olives

Turkey Salad with Worcestershire-Chutney Vinaigrette

The recipe yields a generous amount of vinaigrette; if you have some left over, try tossing it with oriental noodles, dipping fried wontons into it or brushing some onto chicken breasts right before grilling them.

Fresh Figs with Rosemary Goat Cheese

If fresh figs are difficult to find, a delicious alternative would be toasts or crackers spread with preserves-fig or peach, for example. If opting for preserves, use only half the honey called for in the goat cheese mixture. Can be prepared in 45 minutes or less.

Manchego Cheese with Quince Paste

Manchego, made from rich sheep's milk, is perhaps the best known of the Spanish cheeses. Its flavor, similar to that of Parmigiano-Reggiano, provides an ideal foil for fruit or quince paste, a traditional accompaniment.

Celery Boats with Gruyère Pesto

This recipe can be prepared in 45 minutes or less.

Salsa Chicken Salad

Sprinkle shredded cheddar over some tortilla chips, and pop them under the broiler for a minute-you'll have instant first-course nachos. All you need with the salad is a basket of tortillas or crusty bread. Mix some cinnamon into chocolate pudding to wrap up this Mexican-style dinner. Can be prepared in 45 minutes or less.

Tiramisù Angel Cake Torte

Loosely translated, tiramisù means "pick me up," and it has been picked up on practically every menu in America. Since the early eighties, it has been one of the most famous Italian-American desserts, and like spaghetti and meatballs, it is far more prevalent here than in Italy. Purchased angel food cake makes this especially easy.

Coffee and Orange Granita Suprema

You don't need an ice cream maker to prepare this classic frozen treat. Accompany with amaretti or other Italian cookies.
