Nori Snacks
Nori, the familiar seaweed used for rolling sushi, is a popular snack in Korea, especially when treated this way. And if you use the pieces of nori to pick up clumps of rice—a common after-school snack—you may find yourself making this frequently.
Haaq
Haaq is actually the name of a bitter green from Kashmir, not unlike spinach but perhaps a little more strongly flavored. In any case, spinach is used as a substitute throughout India, and this simple preparation is widespread. Neither mustard oil nor the amount of chile (I use only one) is key; but asafetida—also known as hing—the odd yellow powder (it’s made from a resin that is exuded by the roots of the plant) with the off putting aroma, most definitely is. In fact, this is the place to use it and learn to love it, as I believe you will. You can serve this as a side dish (in which case halve the quantities) or as a main course,with rice. It’s also often served with fried fish on top of it.
Spinach with Coconut Milk
Like the recipe on page 486, here is yet another super version of “creamed” spinach (true creamed spinach is on page 490), this one popular in Thailand and elsewhere. You can add curry powder or garam masala to this mix or make it into more of a stew by adding some minced pork or shrimp.
Creamed Spinach
The real deal. It doesn’t matter how you cook the spinach in step 1: you can steam, microwave, or boil it, and there’s no difference in the final result. However, if you can get fresh cream, not ultrapasteurized, you’ll see a real difference in both texture and taste in the final dish.
Roasted Corn and Black Bean Salad
You can use canned black beans for this (you can even use frozen corn), but the salad is best with beans that have been cooked, with good spices, until tender but not mushy.
Potato Salad with Mustard Vinaigrette
Potato salad is an American classic, but this is a lot more flavorful than the mayonnaise-based version. It’s great served warm, but the important thing to remember is that it’s far better at room temperature than cold. If you like, add about 1/4 pound diced slab bacon, cooked until crisp, along with 1/2 cup minced shallot or mild onion for a Germanic twist.
Quick-Braised Root Vegetables with Hoisin
A simple braised dish that brings a new look to root vegetables. Serve with stir-fries or with plain grilled or broiled fish. Other vegetables you can prepare this way: turnips and radishes of any type will fill in nicely for the carrots or parsnips.
Asparagus Salad with Soy-Mustard Dressing
Think of asparagus with mayonnaise but with a very sharp (and relatively low-fat) twist. As in most recipes for poached asparagus, thick spears are best; they retain some of their crispness while becoming tender. Those that weigh an ounce or more each—that is, eight to sixteen per pound—are the best. Their only disadvantage is that they must be peeled before cooking to remove the relatively tough skin. Fortunately, it’s an easy job, with either a vegetable peeler or a paring knife.
Bruschetta
Bruschetta is toast. Usually with olive oil. Often grilled. But no more than that—or not much more. You need coarse, crusty bread; the preceding recipe will give you the kind you want, but any peasant bread will do. The amount of garlic you use is up to you. You might split a single clove and rub it on the slices of bread after they’re toasted; or you might mash a few cloves and smear them on, which is obviously stronger.
Cold Spinach with Sesame
A delicious way to prepare spinach ahead and present it beautifully. This is a place where perfectly fresh spinach will really strut its stuff. (You could use frozen spinach for this preparation, but it will not taste as good.) For a really stunning look, roll the cold cooked spinach in a bamboo sushi-rolling mat, then slice the log on the diagonal before dipping it in the sesame seeds.
Spaghetti con Cipolle
Diced onions mix well with fusilli and penne, so those are the pasta shapes most often used here, but you can use spaghetti if you prefer. Best with Spanish onions (the large yellow ones); add a handful of black olives if you like, too.
Stir-Fried Udon with Pork and Shrimp
Udon noodles are generally made with softer wheat than Italian pasta, giving them a more tender texture. You can find them at Japanese markets and many supermarkets. Like Chinese noodles, they’re great stir-fried. And, as in any stir-fry, you can substitute for the pork, shrimp, or vegetables if you like.
“Singapore” Noodles
These curried noodles are a standby, and can be prepared much more simply: stir-fry the noodles with onions and curry powder, for example, or with a bit of egg. This is a relatively elaborate version, and can be made more so with the addition of bean sprouts (with the basil), sliced Chinese sausage (with the pork or chicken), egg (as in the Pad Thai on page 536), or vegetables like broccoli or asparagus (parboil it first), or tomato. Information on Asian fish sauces like nam pla is on page 500.
Squid Milanese
I have had squid prepared many ways, but never in a Milanese cutlet style until Tanya and I encountered this dish on our trip to San Diego when we went to Anthony’s Fish Grotto. The calamari cutlet was a thick slab, like a veal cutlet, quite different in size from the smaller version of calamari I am accustomed to cooking on the East Coast, and yet very tender. This popular calamari may be up to 2 feet in length; the giant squid can get to approximately 43 feet; in 2003, a colossal species of squid was discovered that can be upward of 46 feet. I’m not sure which calamari was used for my Milanese at Anthony’s, but it was very good; I tested the recipe with the traditional-sized calamari, and it worked deliciously.
Lemon Sole
I cooked this simple dish in my first restaurant, Buonavia, which I opened in 1971. I made it with fresh lemon sole and fluke, bought directly from the fishermen on Long Island when in season. But you can make it with the fillet of any white fish. It is delicious and quick.
Calamari Fra Diavolo over Linguine
There was a time when calamari was not much consumed in America and it was considered a cheap fish. But Italians love calamari, and it became the fish of choice of the Italian immigrants. You can find calamari today as a delicacy in contemporary restaurants of every ethnicity. Spicy calamari with linguine is a trademark of Italian American restaurants all over America.
Orecchiette with Mussels and Broccoli Rabe
Broccoli rabe grew wild in Italy, especially in southern Italy; in places like Puglia, Calabria, Basilicata, and Sicily it was abundant and free for the picking, and thus used especially to dress pasta dishes. Orecchiette, a pasta that has an indentation from being dragged with the finger on a board, was the pasta of choice. All of these regions are on the sea, and mussels were cheap and abundant as well. So it would seem natural that the three ingredients come together to make this wonderful dish. Now broccoli rabe is abundant in the United States, thanks to Andy Boy vegetable growers in California. This recipe is a delightful combination.
Linguine with White Clam Sauce
This is the quintessential Italian pasta dish, especially in Naples and Rome. The ingredients are three; the clams are the smaller ones—vongole veraci—and they are always cooked in their shells. Once they open, the sauce is done. Here in the States, linguine with clam sauce is made with chopped clams, and I guess this adjustment makes sense, especially since the clams here can be quite large, from littlenecks (small to medium) to topnecks (large) to quahogs or chowder clams (very large). Today, though, one is ever more likely to find smaller cockles on the market; if you find them, by all means use them.
Orecchiette with Broccoli Rabe
Broccoli rabe, the leafy bitter almond-flavored vegetable consumed by the Italians for centuries, has found its way into American hearts. It is great just braised with olive oil and garlic; it makes an excellent soup; it is also delicious stuffed and as a flavoring in some crunchy Italian bread. But I love it with pasta, and not with just any pasta—I love it with orecchiette (little earlobes). Rapini, as it is called in Italy, is a plant in the mustard family that grew wild, especially in southern Italy. In America, the largest producer is Andy Boy, a company founded by Stephen and Andrew D’Arrigo, emigrants from Sicily, who officially named the rapini “broccoli rabe.” They knew that the vegetable that was part of their family table in Italy would make it to the American table.
