Chorizo and Clams, Portuguese Style

Portugal lies on the Iberian Peninsula between the Atlantic Ocean and Spain, and many of its culinary inspirations pull from both those places. In the province of Alentejo in southern Portugal, a combination of pork and clams expresses the inherent poetry of this duality. Ruddy with paprika, fragrant with garlic, and redolent of salt air, it is an exotic, compelling dish in which land meets sea in a bowl. The Portuguese are so fond of it that it is exported with them anywhere they settle, including New Bedford, Massachusetts, where it is served with corn on the cob. The dish is traditionally made with pork meat, cubed, spiced, and marinated overnight. I have simplified the recipe by using chorizo for the pork. It provides the same spiciness and color while eliminating a lengthy step.

Northern Isles Lamb Sausage

The highland sheep of Scotland and Ireland graze in rugged terrain with sparse vegetation. Fittingly, the seasoning for a lamb sausage one might find in those northern isles is somewhat understated. A few well-chosen aromatics, along with salt and pepper, suffice to make a tasty sausage that evokes that landscape and its restrained fare.

American Breakfast Sausage

Breakfast sausage, in patties or links, is a staple of the great American breakfast plate. It’s an important player in the hearty, stoke-up-for-the-day meal that includes eggs, cooked anyway you’d like; toast or pancakes; and mugs of hot java. It is served on the road as early as 4 a.m. to truckers and workers off to the fields or factories. A bit later, it feeds tourists fueling up for a day’s adventure of skiing, mountain climbing, and other energetic activities. And on Sunday mornings, home-style cafes are filled with customers looking to splurge calories on a big breakfast out. But you don’t need to stop at breakfast when using this sausage. It also makes a delicious taco filling or pizza topping. As often as not, breakfast sausage is served in patties, but if you prefer links, you can stuff it into sheep casing.

Herb Oil

These are dead easy to make and have endless applications in the kitchen. Use them to baste or brown ingredients and they will add pizzazz and excitement to stews and roasts. Likewise, they will jazz up a panful of onions or other vegetables for a soup or sauce and impart character to fish dishes. Herb oils come into their own when drizzled over summer or winter salads; they are also excellent used in mayonnaises and dressings. The basic principle is to choose robust flavorings and leave them for long enough to impart their mighty characters to the oil. Always use a good-quality oil as your base (see pp. 30–31). In all cases, to prevent the oil from becoming rancid, store in a cool place and use within 6 months.

Garden Pesto

Season: July to August. The big, platelike leaves of the nasturtium plant (Tropaeolum majus) are abundant throughout the summer and often well into the golden months of autumn. With their peppery flavor, they make the perfect base for a fiery pesto. Add a sprig or two of garden mint, a few golden marigold petals, and some spicy nasturtium seeds and you have a wonderful sauce to stir into pasta, swirl on soups, or just smear in a sandwich. Pick the leaves on a warm, dry day–ideally, earlier in the summer, before the caterpillars have decided to feast on them. Whenever I make pesto, I replace the traditional Parmesan with a hard goat’s cheese, matured for a year. It makes an excellent alternative to Parmesan in all kinds of dishes.

Cayenne Buttermilk Ranch Dressing

We use this versatile dressing on more than just salad greens. It makes a good dippin’ sauce for fried or grilled meats and veggies as well as a sauce for Chicken-Fried Chicken sandwiches (page 69) and Fried Green Tomatoes (page 28).

Cajun Corn

This is our most popular “vegetable of the day.” It shows up on the menu every Monday. It’s damn simple and packed with flavor. When you can make it with fresh corn in season, it’s even better.

Grilled Lemon-Pepper Lamb Chops with Rosemary-Dijon BBQ Sauce

Chinese Trinidadian Stir-Fried Shrimp with Rum

When I was in Trinidad, Winnie Lee Lum showed me how to make this superb dish, which beautifully demonstrates the convergence of Chinese and Trinidadian cooking traditions. Of course, the taste was extraordinary because Lee Lum only cooks with fresh local shrimp that her husband, Tony, purchases for her. Before cooking, she rinses the shrimp in lime juice, a Trinidadian cooking practice said to remove the "fishy" taste. She prefers the Chinese custom of cooking the shrimp in the shell to protect the shrimp's succulence and flavor. Rather than rice wine, Lee Lum insists on using dark Jamaican-style rum; according to her, white rum is too harsh for cooking. This is one of the easiest dishes to stir-fry, and it is guaranteed to satisfy.

Chicken Lo Mein With Ginger Mushrooms

This Chicken Lo Mein recipe is extremely simple to make and has a nice peppery flavor from the red pepper flakes, white pepper, and ginger.

Pink Greens

A&M: This may be the most thoughtful sautéed greens recipe we've ever encountered. Beet greens (we agree with Marissa Grace that they deserve more attention in the kitchen) are usually wilted in hot olive oil with a little garlic, and they're delicious this way, but Marissa Grace plotted out ways to amplify the greens’ sweetness while tempering it with chiles. She has you brown garlic with shallot and red pepper flakes, then layer in sugar, black pepper, and salt before adding the greens and wilting them. Just before serving, you splash the beet greens with sherry vinegar, which electrifies the whole dish. The key here is the sugar, which caramelizes with the garlic and tightens up the sauce, so by the time the greens are cooked (and beet greens really should be cooked), it wraps them in a cloak of sweet and fiery sauce.

Roasted Mushrooms with Spicy Breadcrumbs

On their own, roasted mushrooms are golden, buttery, and delicious, but we've gone a step further and jazzed them up by showering them with a blanket of crunchy, chile-flecked breadcrumbs.

Apricot and Arugula Salad with Fresh Ricotta

This salad is a delightful interplay of sweet, creamy, tangy, and peppery flavors. If you prefer, you can swap in ricotta salata or a mild feta for the ricotta; both are saltier than fresh ricotta, so skip the seasoning with zest, salt, and pepper. Apricots have but a brief appearance even at the peak of their season. If you miss them, you can substitute with any other stone fruit. White nectarines, peaches, pluots, or plums would be particularly nice. In the fall, sliced fuyu persimmons are perfect. Whatever fruit you use, just make sure it’s ripe and flavorful.

Grated Summer Squash with Truffle Pecorino

This salad is a wonderful way to venture into the world of raw squash. Using the truffle version of pecorino isn’t absolutely critical, but its earthiness is a fantastic counterpoint to the brighter flavors of squash and lemon juice. For best results, use the smallest, firmest, freshest squash you can find— they’re easier to grate and taste better than the more mature ones. And because this salad is so simple (almost minimalist), the quality of your olive oil really counts.

Garden of Eden Soup

This chilled soup always makes me imagine what summer in Eden must have been like: silky, verdant, bright, and refreshing. My only other need would be a glass of cava or vinho verde to go with it. The quality of your avocados is key to this recipe. Try to find the Haas or Bacon varieties from a domestic grower—the Fuerte ones from Chile (which are common in supermarkets) are too watery.

Oven-Seared Shrimp with Shallots, Chiles, and Thyme

In this fast and easy recipe, the shrimp release their juices and create a delicious sauce in the pan. Using unpeeled shrimp with heads on does make it a little messier to eat, but the results are finger-licking good. If serving this as a main course, a bed of couscous or steamed rice is a nice accompaniment to help soak up the sauce.

Padrón Pepper Poppers

Pimientos de Padrón are little peppers that hail from Spain, where they’re simply prepared and served as a tapa or snack. You can eat these tender peppers whole, and they go perfectly with a glass of crisp dry sherry. This preparation hardly requires a recipe, but it’s so good that it deserves the formal attention of one. If you can’t find Pimientos de Padrón, look for Italian friarielli or Japanese shishitsu peppers (often stocked at Japanese grocers). In their absence, fresh okra spears make an excellent substitute—they just take a little longer to cook. You may also want to add a sprinkle of chile flakes to replicate the occasional heat of the Padróns.
