Ingredients

Carcass of turkey
3 quarts water
1 onion, coarsely chopped
1 carrot, coarsely chopped
1 celery stalk, coarsely chopped
6 parsley sprigs
1/2 teaspoon dried thyme
1/4 teaspoon whole peppercorns

Preparation

  1. Step 1

    Break up the carcass so that it its into a 6-quart or larger pot. Add water and onion, carrot, and celery stalk. Bring to boil, skimming off any foam. Add parsley sprigs, thyme, and peppercorns.

    Step 2

    Simmer 2 to 3 hours. Strain, then skim off any fat from surface of the broth.
