1/2 small red onion, thinly sliced
2 tablespoons red-wine vinegar
3 tablespoons chopped capers (rinsed and drained)
2 tablespoons olive oil
1/2 teaspoon coarse salt

1/2 cup fresh parsley leaves

Preparation

    In a large bowl, combine onion, vinegar, capers, oil, and salt. Let stand 10 minutes. Add salmon and parsley; toss gently to combine and serve.
