Mini Cinnamon Stack Ups

Have fun at breakfast with this terrific taste combination of mini waffles, cinnamon-sugared fruits, and yogurt. Or serve later in the day with frozen yogurt as a different way to enjoy an old-fashioned ice cream “cone.”

    serves 4, 1 waffle and 1/2 cup yogurt per serving

Ingredients

4 4-piece frozen low-fat wholewheat waffles
1 tablespoon sugar
1/4 teaspoon ground cinnamon
2 cups fat-free vanilla yogurt
2 green kiwifruit, peeled, each cut crosswise into 6 pieces
1 star fruit, or carambola, cut crosswise into 8 pieces (optional)
1/2 cup fresh blueberries
1 cup fresh raspberries or strawberries, hulled

Preparation

  1. Step 1

    Toast the waffles. Separate each into 4 pieces and arrange on plates.

    Step 2

    Meanwhile, in a small bowl, stir together the sugar and cinnamon.

    Step 3

    To assemble, sprinkle half the cinnamon sugar over the waffles. Spoon the yogurt onto each serving. Arrange 3 slices kiwifruit, 2 slices star fruit, blueberries, and raspberries on each. Sprinkle the remaining cinnamon sugar over all.
