Hot Bean Dip

This spicy dip makes a filling snack for a crowd. Serve with stone-ground tortilla chips.

Ingredients

One 16-ounce can vegetarian spicy fat-free refried beans
One 4- to 7-ounce can chopped mild or medium-hot green chilies
1 teaspoon ground cumin
1 cup grated cheddar or Monterey Jack cheese, or cheddar- or Jack-style soy cheese

Preparation

  1. Step 1

    Combine the beans, 1/4 cup water, the chilies, and cumin in a mixing bowl and stir until well combined.

    Step 2

    Transfer the mixture to a shallow 1-quart container and sprinkle with the cheese. Cover and microwave until the beans are hot and the cheese is melted, about 4 minutes. Serve hot.
