Grilled Lamb Loin Chops

Recipe information

  • Yield

    4 servings

Ingredients

8 lamb loin chops cut 1 1/2 inches thick
Salt
Fresh-ground black pepper

Preparation

  1. Step 1

Season: 8 lamb loin chops cut 1 1/2 inches thick with: Salt, Fresh-ground black pepper.

    Step 2

Prepare a medium-hot bed of coals. Brush and clean the grill. Brush the chops with oil and put them on the grill. Cook for 3 minutes and rotate 45 degrees if desired, for grill marks. Turn the chops after 6 minutes and cook until medium rare, about another 4 minutes. Let rest for 4 minutes before serving.

  2. Variations

    Step 3

To grill lamb rack chops, count 3 per person, and season as above, but cook over a hot fire for only about 3 minutes on each side.

    Step 4

Grill pork chops over medium coals. One-inch-thick pork chops will take about 10 to 12 minutes to cook.
