Garlic Oil and Garlic Chips

Ingredients

1 cup extra-virgin olive oil
2 tablespoons thinly sliced garlic

Preparation

  1. Step 1

    Pour the oil into a small sauté pan and place over medium heat. Add the garlic and carefully stir with a wooden spoon. Cook for 6 to 8 minutes, or until the garlic just begins to turn golden brown and become crisp. Be careful not to overcook the garlic, or both the garlic chips and the oil will become bitter.

    Step 2

    Strain the oil through a fine-mesh sieve and let cool at room temperature. Carefully transfer the garlic chips to a paper towel to cool. Use them as a garnish for Mushroom Ramen (page 20).
