Daikon

Ingredients

Preparation

  1. Bitter

    Step 1

Daikon is usually milder than your common red radish. If yours is still too bitter, it’s said that cooking it in water in which rice has been rinsed or to which a bit of rice has been added will eliminate some of the bitterness. If you’re planning to serve it raw, just slice it very thin and perhaps serve with a rich dip.

  2. Limp

    Step 2

Soak in ice water until recrisped. (If you soak thin slices, however, they will curl up like potato chips. In case you were wondering.)
