    This Italian recipe for broad, garlicky toasts is a great all-purpose accompaniment for most any type of soup (except for fruit soups). Cut as many 3/4-inch-thick slices as you need from a round of Italian bread. If it is whole-grain, so much the better. Place the slices on a nonstick baking sheet and bake in a preheated 350-degree oven for 10 to 15 minutes, turning once, or until both sides are golden and crisp. Or you may place them right on the oven rack, in which case they need not be turned. Watch them carefully!

    Step 2

    Remove the toasts from the oven. When cool enough to handle, rub one side of each toast with the open side of a clove of garlic that has been cut in half lengthwise. If desired, brush a bit of olive oil on one side of the toasts as well.
