Ingredients

2 tablespoons fresh lime juice
2 tablespoons rice vinegar (unseasoned)
1 tablespoon vegetable oil, such as safflower
2 teaspoons sugar
Coarse salt
1/2 small head Savoy or green cabbage quartered, cored, and shredded
1 cup fresh cilantro leaves
4 scallions, trimmed and cut into matchsticks
1 medium carrot, grated
1/2 jalapeño chile, minced (ribs and seeds removed for less heat, if desired)

Preparation

    In a large bowl, whisk together lime juice, vinegar, oil, and sugar; season with salt. Add cabbage, cilantro, scallions, carrot, and jalapeño. Toss to combine. Let stand 15 minutes before serving.
