This dressing, which I created for my Rustic Chicken Salad, will enliven any salad. Keep whisking while you drizzle in the oil—the vinaigrette will emulsify (thicken).

Ingredients

8 tablespoons lemon juice
2 tablespoon Dijon mustard
1 teaspoon sugar
Salt and pepper, to taste
1/2 cup extra-virgin olive oil

Preparation

  1. Combine the lemon juice, mustard, sugar, salt, and pepper in a bowl. Whisking constantly, slowly drizzle in the oil until the dressing has thickened.
